Drained (reserving juice)

Reserved Cherry Juice
Instructions
Melt ¼ cup of butter in a 9" x 9" x 2" pan.
Sprinkle with ½ cup brown sugar.
Distribute cherries in pan with lemon rind.
Cake
Cream butter and sugar together until light and fluffy.
Beat in 1 egg.
Sift in flour, baking powder, salt; alternating with ½ cup milk.
Beat until smooth.
Spread on top of the cherries.
Bake in a 375° oven for 30 minutes, or until a toothpick comes out clean.
While still warm, cut cake into 6 squares.
Sauce
Blend sugar and cornstarch together in a saucepan.
Add cherry juice.
Cook until thickened.
Serve on cake (or ice cream).
Notes
This recipe also works well with sour cherries fresh off the tree. You may need to cook them down a bit to get the juice.
